If you’ve tasted a plate of Chole Bhature you’ll know how moor-ish it is. To get the best Chole Bhature in Delhi, head to Sita Ram Diwan Chand in the backpacker area of Paharganj. Pran Kohli now runs this place, which his grandfather started over 60 years ago. It’s a basic restaurant that is devoted to just one dish: chole (spicy chickpeas) accompanied by delicious, freshly made bhature stuffed with spices and paneer. The combination couldn’t get any better.

The restaurant is simple – long and high tables grace the space inside; there are no chairs so expect to eat standing up. This is all good because the restaurant is set up to churn through hoards of diners who visit to have a quick breakfast in the morning or a tasty snack during the day. It’s particularly busy on weekend mornings when locals rush in for morning breakfast before starting their day.

Although a tad bit oily, the spicy Chole dish is absolutely divine. The chole is cooked in a delicious spicy gravy with flavours of spice, lemon, coriander and onions mixed in to give the dish a fantastic and deep flavour. The chole has been cooked for quite a long time so they melt like butter in the mouth. It’s a dish that I could keep eating forever.

Another dish that we tried here was the Spicy Aloo (potatoes) cooked with the same spice mixture as the Chole. Another good dish with a lot of flavour, it does lacks the punch that you get from the Chole dish.

And of course, the Bhature that is the perfect accompaniment to the Chole dish. The Bhature is a fluffy bread that is lightly fried and stuffed with spices and paneer (cottage cheese). Eaten with the Chole, the light fluffy bread, with infusions of aniseed and paneer, goes really well with the hot and spicy chole.

If you’re in Paharganj, you must head down to Sita Ram Diwan Chand for some of the best Chole Bhature in Delhi. You can have it at any time of the day – for breakfast, lunch or simply as a snack. It’s cheap, easy and quick to eat and super, super delicious.
